Baked Mango Chicken Breast Recipe

  1. Pre-head the oven to 350°F (if you're only cooking the chicken or a few dishes) or 375°F (if cooking many meals in bulk).
  2. Peel and chop the onion and garlic. Add to a baking dish. I used a large Pyrex glass dish so that the chicken breasts wouldn't overlap.
  3. Wash the mango and cube it. Watch the video above for the easiest way to do this. Add to baking dish
  4. Add the sesame oil, balsamic vinegar, turmeric, cumin, salt and pepper and mix all the ingredients together.
  5. Add the chicken breast and coat well with the mango mixture.
  6. Place the chicken on the top rack and bake for 30-40 minutes. Turn once after 15 minutes. Test for doneness. If not cooked all the way through, check again in 5 minutes.
Recipe Notes

Once you have turned the chicken after 15 minutes of cooking, set the timer for 10 more minutes. Use a metal skewer or a very sharp small knife to test for doneness. Push the skewer ½ way through the thickest part of the breast. If the liquid comes out clear the breasts are cooked. If the liquid is cloudy or even slightly cloudy, cook for another 5 minutes before checking again.
