Beef Roast with Turnip
Turnip adds a unique and wonderful flavour to this recipe. You could also use celery or fennel bulb as alternatives.

Instructions
  1. Peel and slice the onions
  2. Peel the carrots. Cut each carrot in half and then again length-wise.
  3. Peel the turnip.
  4. Look at how I cut the turnip into smaller pieces — cut the turnip in half through the top and then slice the halfs into segments.
  5. Cut each segment into the size of large ‘French fries’.
  6. Add olive oil, spices and wine, and mix everything together.
  7. Remove the beef from its packaging and place it on top of the vegetables in the crock. Drizzle with olive oil and balsamic vinegar. Add fresh ground pepper and sprinkle with sea salt.
  8. Set the slow cooker timer to low for 10-12 hours, depending on your schedule.
  9. When the roast is cooked remove the crock from the appliance to let it cool. Place it on a cork board or on top of the stove. Remove the roast from the pot and let it cool 15-20 minutes on a wire rack. Slice thinly and serve with the vegetables, or put into storage containers in the fridge.
Recipe Notes

The type of beef roast you choose is up to you. A nicely marbled sirloin-type roast will produce the most juice and flavour during cooking. It will also be the most tender. You can use a leaner cut, like eye of round, but the roast will not be as flavourful — in this case add another herb like oregano, possibly another onion, and another ¼ cup of red wine.

Enjoy!
