Instructions
  1. Hard boil the eggs, per How to Boil the Perfect Egg. (You can make these up to the day before and store in the refrigerator until ready to use.)
  2. While eggs cook, finely chop the pickles and place in a medium bowl. Add all remaining ingredients except salt and pepper.Stir.
  3. Let eggs cool about 10 minutes, then peel and dice finely. Combine with other ingredients in bowl.
  4. Stir, then add salt and pepper, to taste. Add extra hot sauce if desired.
  5. Serve on a bed of lettuce or in a sandwich.
Recipe Notes
  • VARIATIONS:

    1. Substitute 1/4 cup finely chopped celery for pickles. Add 1 tablespoon pickle or lemon juice.
    2. Use 2 tablespoons fresh parsley, cilantro, tarragon, chives or basil in place of the dill.
    3. Add 2 tablespoons thinly sliced green onions (tops only).
